Vegetarian Southwest wraps are simple, fresh and delicious - featuring avocado, Pico de Gallo and an array of fresh veggies.

Preheat oven to 375 degrees F.
Peel sweet potato, slice into ¼ inch rounds. Lay flat on a baking sheet and brush lightly with oil. Place in the oven and bake for 15-18 minutes.
Once finished, remove potatoes from oven and allow to cool completely.
Lay tortillas on a clean flat surface. Spread 2-3 tablespoons of beans on each tortilla. Layer spinach, sweet potato, sliced avocado, red bell pepper, grated carrots, cabbage and salsa.
Fold sides of tortilla in and roll tortilla into a wrap. Cut in half and serve.
