Pulled jackfruit tacos are the perfect meatless tacos with savoury sweet & smoky seasoned jackfruit and an array of colourful toppings.

 2 14-oz cans jackfruitdrained and rinsed
 2 tbsp extra virgin olive oil
 1 small yellow onionfinely chopped
 2 cloves garlicminced
 1 jalapenoseeded, finely chopped
 ¾ cup barbecue sauce
 2 tsp ground cumin
 1 tsp dried oregano
 1 tsp ground coriander
 ½ tsp paprika
 ½ tsp kosher salt
 1 tsp finely grated orange zest
To serve
 10 Sonora Soft Taco Tortillas
 1 ripe avocadothinly sliced
 4 radishesthinly sliced
  cup cilantro leavesroughly chopped
  cup red cabbageshredded
  cup corn kernels
 ¼ cup sour cream
 1 limecut into wedges

Place drained jackfruit in a bowl. Using fingers or two forks, shred jackfruit into thin chunks.

Over medium heat, heat olive oil in medium sized pan. Add onion and cook until translucent. Add garlic, jalapeƱo and cook for additional minute.

Add shredded jackfruit to the pan and combine well. Add BBQ sauce, cumin, oregano, coriander, paprika and salt. Stir evenly and cook until jackfruit is browned and slightly crispy.

Warm tortillas in the microwave for 10 seconds. Assemble tacos with layers of jackfruit, topped with avocado, radishes, cilantro, cabbage, corn and sour cream. Serve with lime wedges for squeezing.
