    Preheat the oven to 350

    Mix the eggs, milk, 2 teaspoons of the cinnamon, the vanilla, and half the sugar in a bowl.

    In another bowl mix the mascarpone, and remaining cinnamon and sugar. Season both mixtures with salt and pepper.

    Grease a small skillet or baking dish that is about the same size as the tortillas.

    Dip a tortilla into the egg mixture and place at the bottom of the dish. Spread some of the cheese on top.

    Repeat until you have filled the skillet or baking dish. Top with a final egg soaked tortilla and add a few extra spoonfuls of egg mixture to it.

    Bake at 350 for about 45 minutes until lightly browned on top and cooked through.

    Cut and serve with lots of butter and syrup.

    Preheat oven to 450 degrees Fahrenheit. Line a baking sheet with parchment paper.

    Spray parchment with oil. Line tortillas in a single layer and place 2-3 tbsp of cheese in the middle of each tortilla. Sprinkle 1-2 generous pinches of taco seasoning and fold tortillas in half.

    Spray top side of chips with oil. Sprinkle salt. Bake in pre0heated oven for 5 minutes on one side. Remove from oven and flip. Bake again for 5 minutes or until tops become golden brown.

    Once baked, remove from oven and let rest for 5 minutes. Using a pizza cutter, cut into chip-shaped pieces. Serve with salsa.

    Cool chocolate slightly (about 5-10 minutes); it should be smooth.

    Mix in sour cream.

    Mixture should be the consistency of thick pudding.

    Spread first tortilla with layer of chocolate mix.

    Be sure to go to edges.

    Repeat until all tortillas are used.

    Smother top layer in chocolate. Decorate with strawberries or raspberries.

    Refrigerate at least 6 hours or overnight.

    Preheat your oven to 400 degrees. Spray a large rimmed sheet pan with nonstick spray, olive oil, or butter.

    Take about 1/4 cup of the shredded cheese and sprinkle it in a circle on top of each tortilla. You’ll want to create a nest like situation for the egg.

    Next, break the egg into a ramekin. I find it easier to pour the egg on top of the tortilla if it is already broken. Top each tortilla with egg and place the baking sheet in the oven. Cook for about 10 minutes or until the eggs have set.

    While the eggs cook, make the scallion salsa. Simply combine all the ingredients into a mixing bowl. Taste to make sure there’s enough salt and pepper. This salsa gets better as it sits so it can be made a day ahead.

    Remove the baking sheet from the oven. Let cool slightly and garnish with scallion salsa, radish slices, cilantro, and more jalapenos if desired!

    spread ingredients on each quadrant of the tortilla. Sprinkling crushed pistachios in two of the quadrants, butter and cinnamon in another, and honey in the last.

    Fold together to stack ingredients.

    Brush folded tortilla with butter. Sprinkle with cinnamon, drizzle with honey and add crushed pistachios on top.
