    Preheat oven to 375°. Crush croutons into fine crumbs. Add 1/2 cup picante sauce and 1 tablespoon orange juice concentrate; let stand 10 minutes.

    Stir in 2 tablespoons cilantro, egg and salt. Crumble chicken and chorizo into crouton mixture; mix lightly but thoroughly. With wet hands, shape into 1-in. balls. Place on a greased rack in a 15×10-in. baking pan. Bake until a thermometer reads 165°, 15-20 minutes.

    Meanwhile, in a small saucepan over medium heat, stir together marmalade, pepper jelly, remaining picante sauce and remaining orange juice concentrate. Bring to a boil. Reduce heat; simmer 5 minutes. Stir in mango, 1 tablespoon cilantro and, if desired, 1/3 cup pomegranate seeds. Pour sauce over meatballs. Serve with remaining cilantro and pomegranate seeds.

    Combine all of the shrimp with 1 cup of lime juice in a large bowl. Cover and let rest in the refrigerator for at least one hour until the shrimp are mostly pink.

    In a separate bowl, combine the onion, cucumber, tomatoes, jalapeño, and cilantro.

    Add the shrimp and mix well.

    Add the Worcestershire sauce, and season with salt and pepper and additional lime and lemon juice.

    Mix well and serve on the tostadas adding hot sauce to taste and avocados.

    Add the shrimp, onion, cucumbers, tomatoes, cilantro, jalapeno, and garlic. Place in the fridge and let sit for at least 30 minutes for the flavors to deepen and combine.

    Preheat the oven to 400 degrees. Line a tray with parchment paper.

    Place 2 tortillas on a flat surface and lightly brush both sides of the tortilla with avocado oil. Prick the tortillas with a fork – this prevents them from puffing.

    Once preheated, put the tray in the oven. Bake for 10 minutes total, 5 minutes on each side so flip halfway. You can add multiple tortillas at a time.

    In the meantime, make the beans. Empty the contents of the refried beans into a pot and cook on medium heat.

    Add ¼ – ½ cup of water and taco seasoning. Do not add salt since the taco seasoning has enough salt.

    In the meantime, chop an onion. Add the onion to the beans. Once heated through, turn off the stove.

    Chop the tomatoes, scallions, and jalapeno. Set cheese aside.

    Assemble Pizzas

    Spread a couple of dollops of beans over the tortilla.

    Top off with a little salsa and spread. Use your favorite salsa, or even Taco Bell sauce will work.

    Place the second piece of tortilla on top and top with salsa again. Spread.

    Top with scallions, tomatoes, jalapeños and cheese.

    Place the tortilla pizza in air fryer and fry until crispy or desired texture. Serve hot.

    Preheat oven to 350 degrees F. Place Sonora Fajita Tortillas in oven-safe bowls or large muffin tins. Bake until tortillas form firm bowl shape; usually until golden brown. Set aside.

    Using a knife or pizza cutter, slice excess tortillas into thin strips to make small chips. Bake in oven at 350 degrees F until golden brown. Set aside.

    Cook beef over medium heat until done.

    Add taco seasoning. Simmer for five minutes or until thickened. Stir in beans.

    Place lettuce in tortilla bowls. Top with meat, tomatoes, cheese, avocado and other desired toppings including salsa, sour cream or guacamole. Finish with homemade tortilla sticks.

    Prepare ground beef by cooking fully and draining grease. Add taco seasoning and desired amount of water. Cook until well seasoned/blended and liquid is absorbed.

    Fill tortillas with beef and cheese. Fold in half and brush outside of tortillas with oil.

    Place in air fryer basket in a single layer. Cook at 400 degrees for 8 minutes – flipping half way.

    Remove cooked tacos and repeat for remaining ingredients.

    Top with desired toppings.
