    https://foodsocial.io/recipe/easy-breakfast-tacos/

    Ingredients

    Directions

Heat avocado oil on a skillet over medium high heat.

Crack two eggs in the pan, sprinkle with salt and pepper, and let the whites cook for 1-2 minutes. If you don’t like your yolks runny, you can break them with the edge of your spatula.

Divide Mexican blend cheese on top of the eggs, then top each egg with a tortilla.

Once the cheese is melted slightly, use the spatula to flip the eggs so the tortilla side is on the skillet. Cook for 1-2 minutes until the bottom of the tortillas are lightly browned and crispy.

Transfer to a plate, and top each taco with cotija cheese, chili crisp, chopped onion, cilantro, and lime juice. Enjoy warm.

    Ingredients

    Jalapeno Corn Slaw

    Directions

Preheat your grill to the highest setting. As a note, I like to grill the corn for the slaw. Sometimes I will do that first and then make the slaw, because the fish cooks so quickly!

Pat the fish dry with a paper towel. Season it all over with salt and pepper, then sprinkle all over with the spices. Place the fish on a grill pan (or directly on the grates if you’re not using one).

Place the grill pan directly on the grill. You can also place a few ears of corn on the cob directly on the grill grates to use for the slaw if you didn’t do that yet.

Grill the fish for 2 to 3 minutes with the lid closed, then gently flip the fish and grill for another 2 to 3 minutes more. It should be flaky and opaque when finished.

Warm the tortillas if you wish. To assemble the tacos, add the fish on first then top with the slaw, some pickled onions, cotija cheese and cilantro. Spritz with lime.

    Jalapeno Corn Slaw

Place the cabbage, corn peppers and cilantro in a large bowl. Add a big pinch of salt and pepper. Add in the lime juice and the olive oil. Toss a bunch of times with kitchen tongs until combined. Taste and season with more salt and pepper if necessary.

  • Apple Galette

    Apple Galette

A deliciously easy shortcut to a beautiful French galette with cinnamon sugar-dusted Sonora Tortillas.

    Ingredients

    Directions

Preheat the oven to 350° Fahrenheit.

Cut your apple in half. Using a spoon scoop out the core. Turn your apple lengthwise, cut side down, and slice into 1/8 slices.

Combine the 4 tablespoons of sugar with 1 1/2 tablespoons of cinnamon to create cinnamon sugar.

In a bowl toss your sliced apples with one teaspoon of lemon juice and two tablespoons of cinnamon sugar. Set aside.

Lay your tortilla flat and spread one tablespoon of butter on the top of the tortilla in a circle, about 6 1/2″ in diameter, leaving about a 1 1/2″ space from the edge. Sprinkle one tablespoon of cinnamon sugar on the circle of butter.

Starting from the outside edge of your butter, lay the apples in a ring on top of the butter, about 1 1/2″ away from the edge of the tortilla. Then in the center of the tortilla, lay another ring of apples on top of the previous ring so they slightly overlap and cover any empty tortilla. Your apples should look like a flower when you’re done.

Take the edge of your tortilla and fold it in where the tortilla meets the apples. Holding it down with one hand, take the edge next to it and fold it in and slightly over the previously folded edge. Press down where the two edges meet.

Repeat the process above until all sides are folded down. You should have five folded sides in total.

Melt the remaining butter and using a pastry brush, brush it onto the edges of your tortilla. Sprinkle remaining cinnamon sugar on top.

At each corner, poke three toothpicks through the tortilla, in a straight line, where the edges overlap. This will keep the edges from unfolding, while baking. Bake for 25 minutes.

Then remove from the oven and transfer to a cooling rack. Serve with ice cream or just by itself!
