    To make the dressing: Whisk together the lime juice, olive oil, salt, chili powder, and black pepper. Set aside.

    Place the peaches, jalapeno pepper, bell pepper, red onion and walnuts in a bowl.

    Drizzle it with the dressing. Sprinkle it with cilantro and pomegranate seeds, if using. Serve.

    Cut the corn off the cob. You can also use canned corn or frozen corn. If using frozen, no need to thaw it out.

    Heat the olive oil in a large skillet over high heat. Add the corn and stir it around. Cook for about 3 to 5 minutes or until the corn starts to char. If using frozen corn, you will need a couple minutes extra to get the right charred bits.

    Transfer the corn to a large bowl and let it cool for a couple minutes.

    To the same bowl, add the remaining ingredients. Stir everything together until well combined. Adjust lime juice and salt and pepper as necessary.

    To serve garnish with additional cheese and cilantro, if preferred.

    To make the chicken:

    Line a large cutting board with plastic wrap or parchment paper. Lay chicken breasts on top in a single layer, and then cover with another piece of plastic wrap or parchment paper.

    Using a meat mallet or a heavy skillet (cast iron works best), pound each chicken breast to about 1/2-inch thickness.

    Transfer the chicken to a large bowl or zip-top storage bag. Add all remaining ingredients for the marinade.

    Cover and refrigerate for 30 minutes.

    Working in 2 batches, heat 1 teaspoon olive oil in a large skillet over medium-high heat.

    Remove chicken from marinade and shake off any excess. Transfer to hot skillet and cook for 6-8 minutes on both sides, or until the internal temperature reaches 165F and is fully cooked.

    Add the remaining 1 teaspoon of olive oil and repeat the same steps with the remaining 2 chicken breasts.

    Transfer chicken to a cutting board and let rest for 5 minutes. Slice and serve in salad when ready.

    To make the cilantro-lime dressing:

    Add all dressing ingredients to a blender or food processor. Blend until smooth.

    To assemble the salad:

    Place the chopped romaine lettuce in salad bowls and top with cherry tomatoes, beans, corn, red onion and sliced chicken.

    Drizzle with cilantro-lime dressing and serve.

    Put the beets in a pot and cover with water. Put over medium-high heat until they offer no resistance when pinched with a fork. Let them cool, peel and cut into fourths.

    Peel the oranges and cut them into slices. Remove the seeds and set aside.

    To make the vinaigrette, slice shallots and put them in a bowl, ass the vinegar and let them rest for 10 to 15 minutes.

    Place the beets and oranges on a platter, drizzle with olive oil, season with salt and pepper. Spoon the shallots and vinegar. Finish with the chopped pecans and mint.
