    To make the special sauce, in a small bowl, combine mayonnaise, ketchup, pickle juice, mustard, Worcestershire sauce, and salt and pepper to taste (I like ½ teaspoon salt and ¼ teaspoon pepper). Set aside.

    To make the quesadillas, in a large skillet over medium-high heat, cook beef until browned and cooked through, about 6 to 8 minutes. Drain well.

    Wipe out skillet, coat with nonstick spray, and heat over medium heat. Working with 1 tortilla at a time, add to skillet. Top half the quesadilla with ½ cup cheese, ¼ of the cooked beef. Top with pickle slices, and dill pickle chips if using.

    Sprinkle top half with ½ cup cheese. Fold in half and cook until cheese is melted and the tortilla is golden brown on one side, about 2 minutes.

    Preheat oven to 200°C.

    Cook broccoli in salted, boiling water for 5 minutes or until tender. Drain well and pat dry with paper towel. Roughly chop florets, discarding tough stalks.

    Place in a bowl with spring onion, cottage cheese, cheddar, lemon zest and egg. Season, and stir to combine.

    Lightly spray a non-stick ovenproof frypan with oil.

    Place one tortilla in pan, then spread with half the broccoli mixture and top with a second tortilla. Place over medium heat and cook for 4 minutes or until base is golden. Turn quesadilla and cook for a further 3 minutes or until golden.

    Transfer to oven and cook for 5 minutes or until cheese is melted. Remove from pan. Repeat with remaining tortillas and broccoli mixture.

    Cut into wedges and scatter with alfalfa and extra spring onion. Serve with lemon wedges.

    Heat the tortillas until air pockets form:

    Heat a large skillet (cast iron works great) on medium high heat. Add a small amount of oil (about 1/2 teaspoon) and spread it around the bottom of the pan with a spatula (you could use butter as well).
    Take one large flour tortilla and place it in the pan. Flip the tortilla over a few times, 10 seconds between flips. Air pockets should begin to form within the tortilla.

    Add the cheese and other ingredients:

    When pockets of air begin to form, take a handful of grated cheese, sprinkle over the top of the tortilla, making sure that the cheese does not land on the pan itself.

    Add whatever additional ingredients you choose – green onion, sliced mushrooms, olives, tomatoes, etc.

    Take care not to layer on the ingredients too thickly.

    Lower the heat and cover pan:

    Reduce the heat to low and cover the pan. The pan should be hot enough by now to have plenty of residual heat to melt the cheese and brown the tortilla. If the quesadilla begins to smoke too much, remove from the heat.

    After a minute, check to see if the cheese is melted. If not, return the cover and keep checking every minute until the cheese is melted.

    Fold the tortilla over:

    When the cheese is sufficiently melted, use a spatula to lift up one side of the quesadilla and flip over the other side, as if you were making an omelette.

    The tortilla should by now be browned slightly. If it is not browned, turn the heat up to high and flip the quesadilla over every 10 seconds or so until it gets browned.

    Remove quesadilla from pan and cut into wedges:

    To make the lettuce to accompany the quesadilla, thinly slice some iceberg lettuce. Sprinkle some cider vinegar on it and some salt.

    Serve with the lettuce, salsa, sour cream, and guacamole.

    Preheat the oven to 400F.

    Stack 2 flour tortillas on top of each other. Use a kitchen knife to cut out a pumpkin “stem” from them.

    Set one of the flour tortillas aside. Cut a face out from the middle of one of the tortillas. You can plan your face by scratching out the shapes with a toothpick before you cut, if you like.

    Set the tortilla without a face on a baking sheet. Cover it with cheese.

    Add the other flour tortilla on top of the cheese, making sure the stems line up.

    Bake in the oven at 400F for about 10 minutes, or until the cheese is melted and the edges start to turn golden.

    Serve with sour cream and salsa.

    Sweet Potato Filling

    Heat the oil in a large skillet over medium heat. Add the grated sweet potato and roast for 30 seconds. Then add the spices and stir to combine.

    Once the pan is sizzling, add a little bit of water, then cover the pan and reduce heat to low to avoid burning the contents. Cook for about 6 minutes, stirring occasionaly.

    Add baby spinach, stir to combine and cook for about further 2 minutes, until the sweet potato is tender and cooked through.

    Stir in beans, corn, and parsley and cook for about 1 minute longer, or until heated through. Season with salt and pepper to taste.

    Quesadillas

    Heat a non-stick pan over medium heat and brush with a little bit of oil.

    Spread about 3 tbsp of the filling evenly over half of 1 tortilla, leaving a 1/2-inch border. Cover filling with grated cheese and fold over then empty side of the tortilla, pressing down carefully by using a spatula, so that it sticks a little. (you can place 2 folded tortillas at a time in the pan)

    Cook for about 2-3 minutes, flip and cook from the other side until golden and crispy.

    Repeat with remaining filling and as many tortillas as needed (about 4-6, depending on the exact size)

    Transfer quesadillas to a cutting board. Slice each quesadilla into three even wedges using a sharp knife or pizza cutter.

    Serve immediately, with guacamole or other dips of choice. Enjoy!

    Place on a grill: 5 garlic cloves, 1/2 onion, 1 chile de Arbol, 2 guajillo peppers. Toast these ingredients well, taking care that the chilies do not burn. They toast fast so remove them before the onion and garlic.

    Put all the toasted ingredients in the blender together with 1 tsp of oregano 1/2 tsp of cumin, 1 tbsp of salt and 3 bay leaves. Add 1 cup of water and blend everything very well.

    With the sauce you created marinate the meat for one night in the refrigerator.

    Put the meat in the Instant pot together with the marinade and activate the Meat / Stew button in your Instant Pot and let it cook.

    Once it is finished and you can open the pot, let the meat cool a little and crumble it. There you have your healthy barbacoa.

    Reccomendation

    To make your barbacoa even more delicious, drop some oil in the pan and refry the shredded beef. There you have the most amazing and authentic mexican barbacoa homemade by yourself! Awesome!
