    Directions

    Place cookies in food and process to form crumbs; or crush in a plastic bag.

    Separate into 2 bowls, pour half of the melted stick of butter into each bowl.

    Add jello to one bowl and almond extract into the other bowl, mix well.

    Combine cookie crumbs into one bowl and stir until just mixed.

    Cut tortillas into triangles.

    Place tortillas on a parchment-lined sheet tray and spray or brush with remaining melted butter.

    Preheat oven to 400°.

    Dip buttered tortillas into cookie mixture and coat both sides. Place back on the parchment-lined sheet tray, or on a pam sprayed cooling rack on the sheet tray.

    Bake for 6 minutes or until just lightly browned.

    Cheesecake dip

    While chips are baking, pour the heavy cream into the bowl and whip for a few minutes until starting to thicken.

    Add cheesecake pudding mixture to heavy cream and mix. Then add cream cheese and mix until smooth.

    Garnish

    Once slightly cooled from the oven, melt white chocolate and drizzle on chips.

    Dice strawberries and top cheesecake dip. You can also slice some strawberries and fan out for decorations.

    In a large skillet, sauté ground chorizo until completely cooked through. Remove chorizo from the pan and set aside.

    In the remaining grease from the chorizo, cook onion and jalapeño until fragrant, about 3 minutes.

    Start adding shredded cheese by the handful and stirring until it melts. Alternate between adding shredded cheese and half and half. When mixture starts coming together, switch to using a whisk to stir the queso until smooth.

    Add the spices ,minced chipotle en adobo, chorizo, and diced tomatoes. Stir completely to combine.

    Top with cilantro, jalapeño slices, red onion, cherry tomatoes, and green onion. Serve with tortilla chips!

    Rehydrate the dried chili peppers by cutting off stems and removing seeds from peppers. Add to a bowl of hot vegetable stock (for better flavour) or lightly salted boiling water. Then toss them into the liquid and allow them to steep for 20-30 minutes.

    Prep all veggies by removing stems, seeds and peels. Roast together on a parchment-lined oven tray for 15 to 20 minutes at 355 degrees F.

    Remove once soft and allow to cool.

    Add all roasted vegetables, rehydrated chilies, cilantro and lime juice to a blender with a splash of the broth and blend. Adjust the amount of soaking liquid to your liking.

    Blend to preferred texture, taste to adjust.

    In a large baking dish whisk together Carne Asada marinade ingredients until combined. Add skirt steak, turning to coat with marinade. Cover and refrigerate for at least 1 hour, but no longer than 8 hours.

    Preheat an outdoor grill or indoor griddle or pan to medium-high heat. Cook steaks for 7 to 10 minutes per side, turning once for medium-rare. Remove steaks and allow to rest for 5 minutes.

    Slice thinly across the grain and serve.
