    Preheat oven to 375 degrees F. Add 1 tbsp avocado oil in an oven-safe skillet and heat over medium-high heat.

    Cook sliced onion and bell peppers in oil for around 7-10 minutes, or until tender.

    Remove vegetables from the skillet and set aside.

    Heat remaining oil in the skillet and add sliced or cubed chicken.

    Add garlic and cook for 4-5 minutes, stirring occasionally.

    Meanwhile, mix tomato sauce, salsa, smoked paprika, cumin, chili powder, salt, and pepper together.

    Pour half of the sauce mixture into the skillet with the chicken and cook for an additional 4-5 minutes.

    Add cooked fajita veggies back in to the skillet.

    Stir in black beans, tortilla pieces, spinach and remaining sauce mixture and stir.

    Remove the skillet from heat and top with cheese and cilantro.

    Place casserole in the oven and bake for another 7-10 minutes, or until the cheese is melted and everything is evenly warm.

    Remove from the oven, add desired toppings or garnishes and serve hot.

    Rehydrate the dried chili peppers by cutting off stems and removing seeds from peppers. Add to a bowl of hot vegetable stock (for better flavour) or lightly salted boiling water. Then toss them into the liquid and allow them to steep for 20-30 minutes.

    Prep all veggies by removing stems, seeds and peels. Roast together on a parchment-lined oven tray for 15 to 20 minutes at 355 degrees F.

    Remove once soft and allow to cool.

    Add all roasted vegetables, rehydrated chilies, cilantro and lime juice to a blender with a splash of the broth and blend. Adjust the amount of soaking liquid to your liking.

    Blend to preferred texture, taste to adjust.

    Directions

    In a large baking dish whisk together Carne Asada marinade ingredients until combined. Add skirt steak, turning to coat with marinade. Cover and refrigerate for at least 1 hour, but no longer than 8 hours.

    Preheat an outdoor grill or indoor griddle or pan to medium-high heat. Cook steaks for 7 to 10 minutes per side, turning once for medium-rare. Remove steaks and allow to rest for 5 minutes.

    Slice thinly across the grain and serve.

    In a large resealable bag or large mixing bowl, add all ingredients and combine well.

    Add chicken and toss in marinade to coat.

    Seal bag or cover bowl and marinate in the fridge for 2 to 8 hours.

    Remove chicken from the marinade and grill or cook until the internal temperature reaches 165°F.

    Pour half of the canned tomatoes in bottom of crock pot. Spread in an even layer. Top with half of the peppers and half of the onion slices. Sprinkle garlic in. Top with chicken breasts.

    Sprinkle the chili powder, cumin, paprika, salt and pepper over chicken breasts. Top chicken with remaining canned tomatoes, peppers and onion.

    Cover and cook on low heat 6 to 8 hours, or on high heat 3 to 4 hours, until chicken is cooked through and veggies are tender. Remove chicken and shred. Remove most of the broth/liquid that the chicken creates as it cooks from crock pot and discard.

    Whisk together the lime juice and honey. Add to crock pot along with other ingredients. Gently toss to combine. Serve warm in tortillas with desired toppings.

    Directions

    Slice onions and bell peppers.

    Heat a pan to medium heat. Melt 2 tsp cooking oil and fry onions and bell peppers. Add some water to make vegetables tender. Allow onions and peppers to caramelise. Transfer to a plate and return pan to the stove.

    Add the jackfruit spices to the pan with more cooking oil. Stir until heated through and jackfruit is coated in spices. Add onions and peppers and continue to stir for around 2 minutes.

    Remove pan from heat and serve jackfruit with any or all suggest toppings!
