    Pour milk into the spiced coffee.

    To make the cream topping, whisk heavy cream and sugar using a handheld milk frother until it thickens. This should take just a few seconds.

    Pour flavored coffee into a cup with ice. Spoon on cream topping.

    Optional: Garnish with a dusting of ground cinnamon and sea salt.

    Coarsely grind the coffee beans (about 10 seconds) and place in a large French press pot. Boil the water and pour over the coffee. Let sit about 3 minutes.

    Place in a large saucepan: cinnamon stickes, orange peel, chocolate, piloncillo

    Pour the coffee into the saucepan and heat gently, stirring from time to time, about 10-15 minutes. The sugar and chocolate will be melted..

    Remove from heat and stir in the vanilla.

    Remove cinnamon and orange peel and pour into cups. Top with cream if desired.

    Place the water on a pot, you can use any kid of pot you have available, just make sure is big enough to hold about 8 cups of water.

    Add the piloncillo (or molasses), the cinnamon, anise star and the whole cloves. Stir.

    Bring the water to a boil and then let it simmer for about 5 minutes while stirring to allow the piloncillo to dissolve and the spices to release their aroma.

    Add the coffee and stir well. Cover the pot and immediately turn off the stove.

    Let everything to infuse from 5 to 10 minutes, depends how strong you’d like your coffee.

    Pour through a strainer to serve into mugs.

    Mix milk, cinnamon, cloves, sugar, nutmeg and the pinch of baking soda in a saucepan and stir. Place saucepan over medium-high heat and bring to a boil. Then turn the heat to low and simmer for about 8-10 minutes, allowing the milk to absorb the cinnamon and cloves’ flavors.

    Turn off the heat and remove saucepan from stove to cool.

    While the milk is cooling, beat the egg yolks until they are a pale yellow. You can use your mixer if you want for this step.

    Slowly pour the egg yolk mix into the already cooled milk and stir. Once it is completely incorporated, place saucepan back on the stove and turn the heat on to medium-high, stirring frequently. Cook the mixture, stirring frequently to avoid curdling, for about 5-7 minutes, or until the mixture starts to become thick.

    Remove from heat and pass through a sieve to remove cinnamon sticks and cloves. Add rum or brandy, and mix well. Pour into another container with a lid and let it cool for a couple of hours and refrigerate. The Rompope will taste best if you let the flavors combine, by storing it in the fridge for 2 weeks. But you can use it right away.
