    Add oil to a skillet and heat over medium heat.

    As skillet heats, add onion and garlic; toss frequently to ensure garlic does not burn. After 5 minutes, add in cumin, chili powder, sea salt and cayenne pepper. Toss to combine and continue cooking another 5 minutes.

    Add a tablespoon of water if the pan starts to dry out. After 10 minutes, remove from heat.

    Place garlic and onion mixture, black beans, reserved black bean liquid, tomato paste, lime juice, apple cider vinegar and fresh cilantro into a blender or food processor. Blend until smooth. Add additional spices to desired taste.

    Transfer dip to serving bowl. Garnish with extra cilantro and sour cream if desired.

    Store in the fridge until ready to serve. Leftovers good for 3-4 days in the fridge.

    Cut avocados in half, remove pit and skin, place into a large bowl.

    Add lemon juice, lime juice, red onion, chives, salt and pepper. Mash with a fork until mostly smooth and creamy. Taste and add salt and pepper as needed.

    Add toppings and serve with homemade baked Sonora Tortillas.

    Directions

    Preheat oven to 350 degrees.

    Melt butter in a deep skillet over medium heat.

    Add onion, crab meat, shrimp, salt, pepper to skillet and saute until onions are clear.

    Add cilantro, sour cream and 1 cup cheese to skillet. Blend ingredients and and reduce heat to low.

    Add hot sauce to taste and blend.

    Separate crab mix evening into 4-6 servings in the pan.

    Place one section of filling down middle of a Sonora burrito tortilla, wrap and fold. Add wrapped burrito to a baking pad, fold-side down. Repeat for required servings.

    Pour enchilada sauce over center of wraps and top with cheese.

    Bake for 25-35 minutes.

    Serve with cilantro and sour cream for garnish.

    Heat oil in a medium saucepan over medium-high heat.

    Add onion and saute for 5 minutes, stirring occasionally, until soft and translucent.

    Add garlic and jalapeño, saute for 1-2 minutes, stirring occasionally, until fragrant.

    Add chili powder, flour, cinnamon, cumin and oregano. Stir until evenly mixed. Continue to saute for 1 minute, stirring occasionally.

    Remove from heat. Add vegetable stock, stir until combined.

    Using an immersion blender and puree the mixture until smooth.

    Return the saucepan to medium-high heat. Add almond butter, tomato paste, cocoa powder and sea salt and whisk until combined. Continue cooking until mixture simmers and sauce thickens.

    Reduce heat to medium-low. Season to taste.

    Serve warm. Refrigerate in a sealed container for up to 3 days or freeze up to 3 months.

    Scramble the eggs lightly in a non-stick pan.

    Mix the tomato paste, 1 tsp olive oil, the cream cheese and garlic (optional) to form a creamy spread. Spread this over the tortilla. If desired cook a sausage as well. Tip: wipe the pan clean, so that you can use it to toast the burrito.

    Put all the rest of the ingredients in the tortilla, except olive oil and wrap the burrito.

    Toast on the folded side first at medium high heat with olive oil, so that the ends “seal”. Do this until golden brown, flip and toast on the other side as well.

    Transfer to a cutting board and slice carefully in the middle. Serve immediately!

    Prepare the Rice and Pintos

    Cook the rice in the broth. Dump the cooked rice into a large mixing bowl and allow to cool somewhat.

    Add in the beans, pico de gallo, lime zest and juice and seasoning. Use your hands to gently combine.

    Taste and adjust the seasoning, then mix in the cilantro.

    Cook or warm the meat and other toppings, grate the cheese and set up your other fixings while the rice is cooking and cooling down.

    Assemble the Burritos

    Place about 1/2 cup of rice and pintos on a tortilla and arrange in a rectangle that fits comfortably inside the edges.

    Add meat, cheese, etc. as desired.

    Fold the bottom edge up over the filling, then fold in the two sides, like an envelope.

    Roll the filled portion of the burrito up and arrange with the seam side down.
