    Directions

    Preheat oven to 375 degrees F. Add 1 tbsp avocado oil in an oven-safe skillet and heat over medium-high heat.

    Cook sliced onion and bell peppers in oil for around 7-10 minutes, or until tender.

    Remove vegetables from the skillet and set aside.

    Heat remaining oil in the skillet and add sliced or cubed chicken.

    Add garlic and cook for 4-5 minutes, stirring occasionally.

    Meanwhile, mix tomato sauce, salsa, smoked paprika, cumin, chili powder, salt, and pepper together.

    Pour half of the sauce mixture into the skillet with the chicken and cook for an additional 4-5 minutes.

    Add cooked fajita veggies back in to the skillet.

    Stir in black beans, tortilla pieces, spinach and remaining sauce mixture and stir.

    Remove the skillet from heat and top with cheese and cilantro.

    Place casserole in the oven and bake for another 7-10 minutes, or until the cheese is melted and everything is evenly warm.

    Remove from the oven, add desired toppings or garnishes and serve hot.

    Directions

    Preheat oven to 350 degrees F. Place Sonora Fajita Tortillas in oven-safe bowls or large muffin tins. Bake until tortillas form firm bowl shape; usually until golden brown. Set aside.

    Using a knife or pizza cutter, slice excess tortillas into thin strips to make small chips. Bake in oven at 350 degrees F until golden brown. Set aside.

    Cook beef over medium heat until done.

    Add taco seasoning. Simmer for five minutes or until thickened. Stir in beans.

    Place lettuce in tortilla bowls. Top with meat, tomatoes, cheese, avocado and other desired toppings including salsa, sour cream or guacamole. Finish with homemade tortilla sticks.

    Heat the oil in a skillet over medium heat. Add the onion, garlic, cumin, and salt and cook, stirring, until the onion has softened and browned, about 5 minutes.

    Transfer to the slow cooker and add the enchilada sauce, sour cream, and 1/4 cup water to the onion mixture and stir to combine. Fold in the beans until thoroughly coated.

    Add the chicken in.

    Cover and cook on high for about 3 to 4 hours or on low for about 6 to 7, until chicken is tender and cooked through. Shred the chicken in the pot with 2 forks.

    Add the tortilla strips and stir, then top with the cheese, cover the slow cooker, and cook 30 minutes or until the cheese has melted.

    Once the cheese is melted, garnish with cilantro, jalapenos, and optional toppings.

    Serve over rice if desired and top with optional sour cream, and avocado.

    Directions

    Using a stand mixer (or hand mixer + large bowl), whisk together cinnamon, powdered sugar, vanilla extract, and heavy whipping cream on medium-high speed until smooth, about 3-5 minutes.

    Remove cinnamon cream from the bowl (don’t need to be neat – it’s okay if there’s still cream in the bowl or on the beaters) and add cream cheese. Whip on medium-high until fluffy, about another 3-5 minutes.

    Add cinnamon cream back to the bowl and use a spatula to fold the cream and whipped cream cheese together until thoroughly combined and smooth.

    Cinnamon Crumble

    In a small bowl, use a fork to mix together butter, granulated sugar, and cinnamon until mixture is dark and crumbly.

    Directions

    In a large skillet, sauté ground chorizo until completely cooked through. Remove chorizo from the pan and set aside.

    In the remaining grease from the chorizo, cook onion and jalapeño until fragrant, about 3 minutes.

    Start adding shredded cheese by the handful and stirring until it melts. Alternate between adding shredded cheese and half and half. When mixture starts coming together, switch to using a whisk to stir the queso until smooth.

    Add the spices ,minced chipotle en adobo, chorizo, and diced tomatoes. Stir completely to combine.

    Top with cilantro, jalapeño slices, red onion, cherry tomatoes, and green onion. Serve with tortilla chips!

    Preheat the air fryer to 400 degrees.

    Chop cilantro and set aside. Melt butter in a medium bowl. Using a pastry brush, coat the corn on all sides. Reserve the remaining butter to prepare the sauce.

    Place the corn into the air fryer basket and cook for 10-15 minutes. Flip or turn the corn to cook the corn evenly while cooking.

    Meanwhile, in a medium bowl combine the salt and pepper, remaining melted butter, chili powder, and sour cream. Mix well. Remove the corn from the air fryer and apply the sour cream sauce.

    Pour cotija cheese in a large plate, roll the corn in the cheese or sprinkle the cheese over the corn.

    Add the cilantro and lemon or lime if desired.
