Whisk lime juice, sugar, chile paste, and fish sauce together. Add the peanuts and cilantro, stir until evenly combined.
Toast Sonora Soft Taco Tortillas until golden brown. Add 1/4 - 1/2 cup of pineapple to each tostada. Top the pineapple with nut and sauce mixture. Season with coarse salt.
