Time to break old habits? Why not try out tempeh, a plant-based protein, in your next burrito! It is delicious and hard to go wrong if this is your first go at tempeh. Wrap it all up in a Sonora Tortilla and you are in for a delicious meal.

 2 Sonora Tortillas
 200 g Tempeh
 ¼ Bell PepperThinly Sliced
 ½ Red Onion
 1 Garlic Clove
 ½ tsp Chili Powder
 1 tsp Cumin
 1 cup Vegetable Stock
 2 tbsp Vegetable Oil
 80 g Tin of Tomato Puree
 1 cup Basmati Rice
 200 g Green Beans
 1 cup Guacamole
 80 g Tin of Kidney Beans
 ½ cup Vegan Cheese

Heat a pan on high heat. Add two tbsp of vegetable oil.

Put the red onion in the pan. Stir before adding the bell pepper. Stir until soft and translucent. Then add garlic.

Pull the tempeh apart and add to the pan.

Stir in the tomato puree. Then add the chili powder and cumin and vegetable stock. Let the tempeh simmer for 20 minutes.

Assemble the burrito and take a tortilla. First add the rice then the tempeh meat, green beans and kidney beans. Then add guacamole and generous amount of vegan cheese. Wrap the burrito.
