 2 15oz Cans of Black BeansRinsed
 ½ cup Finely Chopped Red Onion
 1 Red or Yellow Bell PepperDiced
 2 TomatoesDiced
 2 cups Frozen CornThawed
 ¾ cup Chopped Fresh Cilantro
For the Dressing
 ¼ cup Vinegar
 Juice of 1 LimeOr lemon
 2 Garlic ClovesMinced
 2 tsp Cumin
 1 tsp Coriander
 ½ tsp Crushed Red Pepper FlakesOr a pinch of cayenne

Drain and rinse the beans and place them in a large salad bowl.

Add the onion, peppers, tomatoes, corn, and cilantro.

In a small bowl combine vinegar, garlic, lemon or lime juice, and seasonings and pour over salad.

Toss gently to mix.
