Southwest Veggie Wraps

 1 14.5 oz can refried beans
 2 medium sweet potatoescooked
 1 tsp avocado oil
 ¾ cup salsa or pico de gallo
 ½ avocadosliced
 3 cups fresh spinach
 ½ yellow bell peppersliced in thin strips
 ½ cup carrotsshredded
 ½ cup purple cabbageshredded
 6 Sonora Burrito Tortillas

Preheat oven to 375 degrees F.

Peel sweet potato, slice into ¼ inch rounds. Lay flat on a baking sheet and brush lightly with oil. Place in the oven and bake for 15-18 minutes.

Once finished, remove potatoes from oven and allow to cool completely.

Lay tortillas on a clean flat surface. Spread 2-3 tablespoons of beans on each tortilla. Layer spinach, sweet potato, sliced avocado, red bell pepper, grated carrots, cabbage and salsa.

Fold sides of tortilla in and roll tortilla into a wrap. Cut in half and serve.
