Burger
 1 lb ground beef
 ¼ medium yellow pepperfinely diced
 2 garlic clovesgrated or pressed
 2 tbsp minced cilantro
 ½ tsp cumin
 ¼ tsp chipotle chili powder
Toppings
 4 Sonora Soft Taco Tortillas
 1 cup shredded Mexican cheese
 1 ¼ cups canned corndrained
1 large jalapeno pepperseeded and sliced
Homemade chipotle mayo
 2 tbsp mayo
 Salt
 ½ tsp chipotle chili powder
 Dash of paprika
1

Combine burger ingredients and mix well, until all ingredients are incorporated throughout.

2

Preheat skillet over medium heat and add vegetable oil.

3

Create two burger patties; be sure to make them wide so they fit on the tortillas.

4

Cook burgers on both sides until browned and cooked to preferred doneness. Set patties aside and prepare toppings.

5

Drain burger juice and add four flour tortillas. (Or do two at a time if they don't all fit in the pan. Prepare bottoms and then tops.) Evenly divide cheese among all four tortillas. Cook over medium-high heat until tortillas are crispy and cheese is melted. Remove from heat.

6

Add corn to two of the tortillas; these will be the bottom halves of the cheeseburger quesadillas.

7

Top bottom halves with jalapeño peppers, tomato slices and avocado slices.

8

Mix chipotle mayo in a small bowl and drizzle over burger.

9

Top with other tortillas.
