Loaded Black Bean Dip

This loaded black bean dip eats like a meal with corn, red peppers, cilantro, lime and Cotija cheese.

 2 15 oz cans black beansdrained and rinsed
 1 serrano pepperseeded
 1 green onionchopped
 ½ cup cilantroloosely chopped
 2 limesjuiced
 1 clove garlicminced
 ¼ tsp ground cumin
 ½ tsp sea salt
  tsp black pepper
 Water to thin mixture as needed
Toppings
 ½ cup corn
 ½ red bell pepperdiced
 2 tbsp Cotija cheese
 2 tbsp cilantrochopped
 1 limecut into wedges

In a food processor or blender, combine black beans, Serrano pepper, garlic, green onion, cilantro, lime juice, garlic, cumin, salt and pepper. Add water in small amounts to adjust consistency as needed.

Transfer mixture to bowl and refrigerate until ready to serve.

Top with corn, bell pepper, Cotija cheese, cilantro and lime. Serve chilled.
