This is surely the tastiest queso you'll try. With some added kick from the Jalapeño, it will be hard to stop dipping, and dipping... and dipping! Serve with some sliced and lightly baked Sonora Tortillas, and enjoy!

 1 tbsp butter
 ½ yellow onionchopped
 2 jalapenosseeded, chopped
 2 cloves garlicminced or grated
 1 tsp cumin
 1 pinch salt
 2 oz cream cheeseat room temperature
 1 ½ cups whole milk
 12 oz sharp cheddar cheeseshredded
 12 oz Monterey Jack cheeseshredded
 2 tbsp all purpose flour
 2 chipotle peppers in adobo saucefinely minced
 mango salsa, red salsa, and chips for serving

Heat the butter in a large skillet over medium heat. Add the onion, jalapeños, garlic, cumin, and a pinch of salt. Cook until the onion is fragrant, about 5-10 minutes. Add the cream cheese and milk. Cook over medium heat until the sauce is smooth and the cream cheese has melted.

In a bowl, toss together the shredded cheese with the flour. Little by little, add the cheese to the warm milk, whisking until the sauce is smooth. Stir in the chipotle peppers.

Serve the queso warm topped with salsa and avocado. Use chips for scooping. EAT.
