A vegan breakfast that will bring everyone running to the table with seasoned scrambled tofu and creamy avocado on a crispy Sonora Tortilla.

Bring a skillet to medium-high heat. Add oil and break apart tofu. Scramble until lightly browned. Put aside.
In a bowl, mash avocado and combine with green onion, tomatoes and sesame seeds.
In a clean skillet, toast a Sonora Fibre+ Tortilla until browned and crispy. Once removed, spread avocado mixture over flat tortilla. Top with scrambled tofu and cilantro. Serve warm.
